Super Sunday Recipe Ideas!

Although the Super Bowl participants won't be known until Sunday when Philadelphia battles Arizona and Baltimore tussles with Pittsburgh, you can go ahead and start getting your menu for the big game ready now thanks to a new host here at RSS, Brian Whitcomb! Brian is hosting the Road Kill Side Show on Saturdays at 11am. Brian has put together a few recipes for you to help give your Super Bowl party a biker flavor!

Blue Cheese Dressing
Ingredients Quantity
Heavy Mayonnaise 1 Cup
Heavy Sour Cream 1/2 Cup
Kosher Salt 1 tsp
Cracked Black Pepper 1/4 tsp
Basque Red Pepper 1/2 tsp
Mustard, ground 1/2 tsp
Garlic Powder 1/4 tsp
Worcestershire 1 tsp
Parsley, fresh 2 TBSP
Horseradish, drained 2 tsp
Crumbled Blue Cheese 1 Cup

Preparation:
Combine all ingredients with exception of Blue Cheese into a mixing bowl. Using a wire whisk, mix all ingredients to fully incorporated. Add Blue Cheese Crumbles and gently fold into dressing mixture. Cover and place into refrigerator until ready to use.

Fried Chicken Wings
Ingredients Quantity
Chicken Wing sections 5#
Buttermilk 1 qt

Batter
Flour 1 Cup
Season Salt 2 TBSP
Cornstartch 2 TBSP

Preparation:
Place the chicken wing sections in a nonreactive container. Pour to cover the chicken
sections with the buttermilk. Allow chicken to marinate in a refrigerator for a minimum of 3 days. Heat fryer to 350 degrees. (This is the BIKERS job) While fryer is heating, combine all dry batter ingredients into a mixing bowl large enough to contain chicken pieces. One by one, take a piece of chicken from the buttermilk marinade and dredge in the four mixture. Immediately add the pieces of chicken to the fryer. Fry the chicken until its internal temperature reaches 165 degrees. (We canʼt get anyone sick!) Rule of thumb, fry it till it floats. Remove from fryer and serve immediately or toss with your favorite sauce. Serve with Crumbled Blue Cheese Dressing with Celery and Carrots

MACHO Nachos
Ingredients Quantity
Pulled Pork Butt 1 lb.
*Fresh Fried Flour Tortillas 6 x 12” cut into triangles
Kosher Salt or Margarita Salt TT
Black Beans, drained 1/4 Cup
Plum Tomatoes, seeded and diced 1/2 Cup
Sweet Yellow Onion, chopped 1 Cup
Butter, unsalted 2 TBSP
Poblano Pepper, roasted and sliced 1/4 Cup
Shredded Cheese Blend 1/2 Cup
Cilantro, fresh 2 TBSP
Sour Cream 2 TBSP

Preparation:
Turn on and set fryer to 350 degrees. Take *fresh flour tortillas and cut into desired size chip shape. When fryer reaches temperature, add chips and fry until golden in color. Remove from fryer and place into bowl lined with paper towel. Immediately add Kosher Salt, to taste. Hold to the side. Heat large skillet on medium high flame. Add butter to skillet. When butter begins to melt, add chopped onions. When the sides of the onions begin to slightly turn brown,add the pulled pork. Season to taste. Cook to completely reheat pork and hold to side. To build MACHO Nachos: Heat oven to 350 degrees or turn top broiler on. Start with one layer on plate with fresh fried tortillas chips. Sprinkle 1/2 the cheese over the chips. Next layer 1/2 the Pulled Pork on top. Make another layer of the fresh fried tortilla chips. Follow by adding the drained black beans, remaining pork and the remaining cheese. Lastly, make one final layer of chips on top. Garnish the top of the MACHO Nachos with the roasted poblano peppers, the diced plum tomatoes and shredded cheese. Place plate in oven and melt the cheese. Remove plate carefully, itʼs HOT!!! Top MACHO Nachos with Cilantro leaves and dollop of sour cream and serve.
